I like Saaz to, as far as the honey goes I use a very generic honey in the boil so it doesn't over power
And yep it is very fermentable

The more I use saaz the more I use.
That sounds like an addiction developing there.
Honey it is almost entirely fermentable.

Slightly off topic, but I'm about to to the following brew:
Coopers Bavarian Lager
1kg Coopers BE#2
500g Coles home brand honey
Maybe add some Saaz hops (if I can get to a HBS today)
Anyone reckon this will be fine enough? Should I reduce anything - i like to have the little extra alcohol, so usually have 1.25kg to 1.5kg various sugars/malts.
Is the hops really necessary with a honey beer, or is that more a personal taste thing, in case I can't get to a shop today?

I always balance with some extra hops, 14 to 28 g of Saaz will be nice. Depends where you put them in, maybe 14 for 20 min in the boil and 14 for 1 minute for aroma

i had really good results from a Bavarian / Honey / Hallertau mix.
honey i got from the local markets, not mass produced.

Well I've put this brew down tonight, so shall see how it goes.
Yardie, the Hallertau is a thought, I loved it in a wheat I've done, so may try it sometime.
