interesting point about the pH, drsmurto... and re. powder form malt lasting longer than hydrated malt - it makes sense.. imagine putting a powdered acid, say, citric acid, with sodium bicarbonate (alkaline)... keep them as dry powder and not much will happen... add water and watch the fizz
