at two weeks the SNPA clone above tastes great! the crystal seems to have mellowed already and its now my best brew so far! sorry bout the hijack TL  having never actually tried the original beer i cant say how close it is  seems a little toward a kilkenny ??? kinda tan coloured creamy head.

Glad you like it! 8)
The Kilkenny like notes in my recipe are from the small Choc malt addition - I should have clarified in the recipe that I use a pale choc malt to give a slight grain twang to complement the beer's bitterness as well as a slightly copper colour addition since SNPA is not as pale as LCPA. And yes, with some Irish ale yeast and a bit more choc malt, it's very close to my Kilkenny clone recipe!

Cheers,
TL

Cheers Leigh, glad you like it! :D
I make a keg of this regularly and try not to drink from the keg until a month or so has passed - the keg conditioning (in an all year 18C cellar under the house!!) mellows the hops and allows the hops to blend better with the malt profile. It's a bit too bitter when fresh but if you can, try to leave a keg of this for 4 to 6 weeks and you'll see what I mean. It's one of the joys of making 10 gallon batches and having 8 kegs - I brew beer that I can drink now whilst leaving some aside for later to compare...

Cheers,
TL

cracked open a 2 week old bottle of TL's SNPA over the weekend, i'll be honest i don't normally like hop driven beers and made this more for my friends but it came out fantastic, it's still a litle bit green and grassy but i can tell it's gonna be fantastic in a few weeks time, screw my mates i'm gonna drink it

also on another note TL's kilkenny clone is pretty amazing, except for the lack of nitrogen i would be hard pressed to tell the difference between this and the real stuff, top work trough lolly

two thumbs up

Is there an easy way for anyone to translate a recipe for a kit + hops clone? I was hoping to attempt a Sierra Nevada copy (or at least a resonable facsimile) for my next venture, but have been unable to find a write-up for kit ingredients. If anyone's able to help, i'd be hugely appreciative. thanks/kanga

Try Coopers Pale Ale with a bunch of Cascade hops and Crystal grain.

Thanks, I will try it. Isn't there a bit of amber-ness to it? Would a can of Amber LME help out, or overkill? Sorry going from memory of Sierra Nevada, 10+ years ago now.

Amberness comes from the Crystal grain.

SNPA is a very dark pale ale, about as dark as you can get and still call it pale. Most recipes for it have about 700-800g of crystal. All that crystal makes it very malty which is what balances out the high amounts of hop flavour and aroma (and is what LCPA is missing IMHO). If you wanted to use a kit as a base, the Coopers pale ale would work, but you might get a more authentic hoppiness if you went with an american pale ale kit (Muntons?).

The amber liquid malt would be a good plan if you didn't want to do the steeping of the crystal malt, as amber malt is just pale malt plus crystal malt. I don't know of any way to tell what the equivalent quantity of crystal is tho. Then go for a bunch of Cascade flavouring and aroma hops.

great, thanks guys. I've haven't yet worked with crystal grain but have wanted to look into it, so this may be the experiment to start with. I need to learn some more about them and how best to work with so will start there. Thanks again, very helpful.

Hey mates, thanks for the K&K version. When I make my first HB batch, this is likely to be the recipe I'll use (plus some yeast starter made from the dregs of 2 or 3 bottles of SNPA).

Cheers,

John

I'd be interested to try this as an all extract recipe, would this work? (I havent done an all extract before, so excuse my newbie status if this isnt right :P )

1 tin liquid malt extract
1kg dried light malt
500g crystal grain
50g chocolate grain
20 g Northern Brewer (Pellets, 7.4 AA%, 60 mins)
18 g Amarillo (Pellets, 8.5 AA%, 30 mins)
10 g Cascade (Pellets, 6.3 AA%, 15 mins)
10 g Amarillo (Pellets, 8.5 AA%, 15 mins)
10 g Cascade (Pellets, 6.3 AA%, 2 mins)
Wyeast 1056

Any suggested changes to this?

For the one I just bottled last night, I sort of winged it, and banged together a shitload of LDM, some liquid Amber malt extract, and scary amounts of cascade hops and nearly as much Perle. Also think I had a leftover bag of coopers brew enhancer laying around so it went in too...I'm not as fastidious as some in my record keeping but i like what i make.

we'll see what I get in a month or two's time, but suffice to say that it smelled and tasted good enough from the hydrometer readings that I often had to take a few, just be sure.

i am very happy :D with what i put in the bottles.

yeah, that's the one I sort of followed. went with a can of amber malt rather than the crystal etc in interest of time, but otherwise followed that. Looking forward to seeing if/how the Wyeast liquid yeast comes out, as it's my first attempt with a liquid yeast.
