I think it is more of a personal preference thing to be honest. I loosely followed a much promoted method from "elsewhere" (as opposed to my usual base recipe) and found it to be a bland and watery (yet somehow very unpleasant) experience.

But if you're not much good at deciphering cross-board code...I made a scratch GB and am finding it pretty gutless despite 2.5kg of ginger. Possibly my fault but I have no problem sucking big gingeriness out of my kit brews with 1kg of fresh added - so in future (or 'present' as my fermenter would suggest) I'll continue playing with the coopers kit as a base.

From memory the recipe was (all boiled, everything but ginger in the last 15 min) the 2.5kg ginger (peeled, grated with ginger grater (too hard, never again)), cinnamon, cardamom, nutmeg, chilli and lemongrass. Oh and some baker's yeast as nutrient. US05. Lemongrass was pretty overbearing in this one but apart from that everything is pretty insipid. Oh, except for the chilli - has absolutely nothing to hide behind here.
[EDIT: Oops! Fermentables were most likely 750g raw sugar and 250g dark brown sugar.]

Nogne O Imperial Brown Ale - Man, I'm getting pretty tired of how this brewery always knocks out amazingly different but brilliantly balanced beers.

My now award winning, 'Best Overall Exhibit' Sierra Nevada Pale Ale. Most Kudos should go to Trough Lolly, although now I can claim it as my own. My sweet stout won 1st place too so it was a good day. Earnt enough for another brew, how good is that. Even the mrs was impressed and is framing them. Sad But True.

I've never made a sweet stout, care to share the recipe?

Just finished a bottle of Leffe Radieuse.

At 8.2% ABV it's not a quaffer, but a sipping beer. Attractive deep amber/brown colour with hints of red , bright.
Lovely malt and body. The body is obviously lightened by the use of sugar of some sort (candy?).
Taste is of very clean malt, raisins and fruit.
There's not a lot of bitterness I can detect, but sweetness on the finish, probably from the alcohol.
The alcohol is detectible by a slight hotness, but doesn't take the beer out of balance.

That's the shortcut to the thread. It's a miracle it turned out as good as it did. I racked and used gelatine. I only ever did 3 partials, going AG was so much easier.

I hope you guys realise it was just the local show, not Nationals or anything? I'm still stoked though.

Just got back from a few days round trip up the Waterfall Way, and back home down the Oxley Highway.
No camping for us, just a very good B&B at Dorrigo, and a motel in Uralla.
The weather was perfect, no rain, plenty of sun, with only a little cloudiness. Temps in the low 20s, perfect for walking the tracks around the waterfalls.
Walked into a bottlo at Dorrigo, and was amazed to find some bottles of Highgate Old Ale, and Maisel's Kristalweizen.

The Maisel'swas a very nice, relatively light bodied weizen, with gentle balanced weizen flavour, but nothing to make it really special.

The Highgate Old Ale went down a treat. Really dark colour, nice body, with some malt complexity on the palate, and just enough bitterness from the black malt on the finish to clean it up. No obvious hop character in this one.

Sampled a few beers in Byron Bay.

First off was my second attempt at drinking the Stone and Wood Draught Ale. My first crack at it was on a trip to Brisbane and i did finish the pint but it was hard work.

Second crack at it was worse, i had a mouthful and left it. Tastes like there is a randall full of freshly mown grass between the kegs and the tap.

Later in the trip someone handed me a pint of Byron Bay Premium Ale. It was not too bad, quite plain and relatively clean tasting but seemed like more of a lager to me. It was good enough for a few of us to track down the brewery the next day and I had a chat with one of the brewers who happened to be ex-Adelaide.

I tried the dark lager (reminded me a bit of my dunkel) which the brewer told me was a darker bock lower in alcohol. Whatever style is may have been it was very good. Followed that up with the australian pale ale which was cloudy (coopers have a lot to answer for) and had a nice balance between malt and galaxy hops. I enjoyed it.

Tomorrow is going to be a huge beer day, the annual xmas case swap organised on AHB. My contribution for the case swap is my rye 'golden' ale with all homegrown chinook hops. Also taking a keg of the same beer except i used homegrown cascade. Will be serving it through my handpump although a few other brewers are bring kegs to serve through it as well so it will likely to rotated regularly.

It's funny how that can happen in tiny towns like Dorrigo. One of the best-stocked bottlo's I've been to was in Wentworth Falls in the Blue Mountains.

I'm just about to head off to DM's to organise a "research night." Been a very long day with some considerable overtime so the research night will probably be over at a very tame hour, but looking forward to hunting for a few things that I've yet to have sampled.
