IMO there is no grey area for sterility, either something is sterile or its not. Saying somehting is nearly or close to sterile is like asking whether someone is dead or very dead.

Sanitised is one thing, Sterile is another.

Whilst any of your brew gear is open to atmosphere for even a second or two, whether it be during your "sanitisation" process or while pitching yeast or transfer of Wort or any process where it is not in a closely controlled environment (ie, whole room, filtered air & biologicaly dead) it is a long way from Sterile!!!
Just breathing near it makes it un-sterile let alone what floats in the air or the water we use, boiled or not.

If any one thinks his brewery & equipment is Sterile you have been misled!

Sanitised is achievable, Sterile is not!

I also agree Mick. I was just responding to speedie's assertion that something could be 'close to sterile' or 'pretty sterile'.

my reasoning was that yeast cells are in the 3.5 plus micron size and would be subgect too filtration with a one micron filter not the brew wort whatever being sterile

If you don't like it you're very welcome to exercise your "constitutional" right to leave and never come back.

The use of the word sterile in this regard is actually correct.

Sterile filtration is what commercial breweries do to remove ALL yeast from the beer.

Once you remove all the yeast you are said to have sterilised the beer (ie. removed the bugs aka yeast)

Quick post
There was a sample taken from the keged wicked ale today
In the glass it has cleared very well
Taste is still evolving but would put it in the too age basket
Will put some in next years Perth beers awards and see what feed back we get

Update on wicked ale
This last weekend was a group work day and we bottled all of the ale that was settling
I primed it with 1.3 grams per litre of dextrose and added some yeast (us05) that was collected from previous brew
It has cleared some what but not bright
Life in the bottle should bring about brilliant clarity

bum bought another bottle of rouges yesterday man it had twenty times more yeast in it

Hi everyone, I've just looked through this thread as it's my first day here. Speedie, it looks like a fun day of brewing. One thing to note for future brew days is to keep an eye on the kettle as it approaches the boil as this may help avoid the boil over you seem to have suffered. Once again, it looks like a great day.

a good brewer friend of mine that brews 3000litre batches as a professional brewer tried my wicked ale that was brewed with that mutated yeast and he gave it the thumbs up and said that it could easily be in the upper end of high alcoholic beers on sale at present
I should send you one so you can evaluate it for your self
Oh i forgot that you would rather drink poison than my beer
Now that is a dam shame cause you will miss out on something special
