Ok you all know my story now i think?
I have made my mods and now i will be making up my second brew, it's another Coopers but this time it's the real ale kit.
My question is this, should i follow the kit instructions and use the yeast provided, or follow what you guys come up with?

I will be mixing it and fermenting it in the barrel convertion this time then bottling into pet bottles when ready, NO BUCKET WILL BE USED

i would just use the kit yeast to start with, to see if you can get it right before you start spending more money on extra yeast

Kit yeast will be fine for this brew. The Coopers ale yeast is actually quite a good yeast.

One key factor is not to follow the instructions on pitching and fermentation temperature. I would pitch the yeast, and try to control your brew to betweeen 18 to 20ºC.

Agreed, keep it under 20c if possible.

The coopers packet yeast is fantastic imo,

At the moment im doing a stout around 20, without a fridge.

I wrap it with a wet towel and sit it on cold tiles in my laundary, in adelaide its 24 during the day And 13 outside at night.
20 - 24 inside during tha time.

Also dont do 23 ltrs with coopers kits...
I do 22 ltr max with the ale kits and 19 ltr with stout kit.

Ok i have some news, my first brew the lager kit i nearly destroyed is doing just fine.
I have been to the beach all afternoon with the family, and i dropped a line caught some small flatheads, put em back misses not into me knocking em out etc lol. Anyway while we been to beach i put a couple of my pet bottled lagers in the fridge, ijust drank one straight off. I know it's early by about a week and a half but i had to try it, and boy - it's strong with a nice depth for a lager, no nose to it other than a lager type smell (if you know what i mean)?
It's almost clear, fizzy all the way down the glass but the head collapsed about half way down the glass, (is that normal)?
Cheers guys, the rest will follow over the next few weeks, i had to try a couple lol.

not retaining head seems quite normal at this stage, im glad its drinkable, my first one didnt work at all
