Brewing temperatures

So, 32oC here in Melbourne today, with more 30+ days to come.
I guess that brown ale I've got in secondary will be my last brew for a while.
Those two little words that mean so much- "temperature control". Sigh.
Will also have to get the stockpile insulated- have some heavy duty corrugated cardboard boxes that slide down over the stacks of milk crates.

$199 for a wine cooler fridge @ K-mart for primary and secondry and your back in the game again.

I've got my fermenter in Sydney - in the laundry tub, filled with water, and ice blocks in the water, keeping temps at about 21-23, with outside temps up to 30. Oh, and towels draped over, wet.
It's keeping temps reasonable.

Doing the same, except mine is in a crate in the garage, not the sink.
Keeping about 20 degrees

, but this was a lager yeast which I thought I'd try and get in when we had that cool snap 2 weeks back

Check out your local supermarket for the Polystyrene Brocoli boxes perfect size for fitting 18long necks, they come with a lid and help to keep a constant temp. for bottle conditioning. I've got about 10 of them all free.

Ah, thats an idea - a crate rather than the sink - cool, Antsvb.
I think one of my eskies is big enough for the job.

I'm fortunate that the thermostat for my heating system is right next to the brew cupboard so I can keep a reasonably accurate eye on the temperature. Currently temperature outside is 32C, but it's 25 in the brew cupboard. If it gets much hotter though, I'm going to have to break out the ice cubes and wet towels. But it's forecast to rain tomorrow... so the temperature should drop

Or do as I do and use the brocolli boxes to make an insulated fermenting box. I put 3 on top of each other, glued together then filled the gaps with expanding foam.
Throw in ice bricks twice a day and I can keep the temps down to around 11-14 degrees without much trouble at all. Here's a link to a photo of it:

our laundry is central in the house and doesn't tend to get very warm. I have my fermenter on the bench wrapped in a soaking towel with ice blocks in the lid depression and it's at 22 degrees. If it gets much warmer I may plop the lot in the sink with ice and such but I think the other family members might have something to say about that!
I've got access to a cellar at the old mans place but it's an hour away. I may put down a lager later in december or such (or maybe sooner...) to enjoy at the tail end of summer. It's a constant 11-13 degrees in there

Hey guys just a quick question that has probably been answered before, but I have a pale ale that is nearing the end of its fermentation ( gravity 1012, OG 1062) and today the brew hit 26c after spending most of its life at about 21c. I have cooled it back down to 22 in the garage fridge. I sampled it when i took its last reading and it was strongly reminiscent of pineapple juice. I used a safale US 56 yeast and wonder if i have stuffed it up with this temperature spike? Anyone done the same?

Having done most of its brewing at 21c the late spike wont stuff the beer. Also, 26c is not a panic temp for most Ale yeasts. Chances are you will barely notice it, and then only if you are looking.

was only referring to myself who resides not in melbourne, that a thermostat is 113 dollars (pstg) as opposed to 103 you. ( nil pstg ).

i had a look up at my local kmart - they are mistral brand wine coolers, they only get them in now and then and cant order or let you place a deposit on one
