Full flavour ; Low alochol

I looking for a receipe for a nice hoppy wheat that has plenty of body,plenty of hops but light on the alcohol.Any help would be good!

Well..a wheat beer should not be hoppy but.....
here is a decent basic wit..my summer special actually, it great because you can ferment it out in 4 days , keg and serve the same day..the highest expression of Grain to Brain in Less than a Week.

Use about
1.5 kg of pale (Galaxy is ideal)
1.5kg of wheat ( unmalted for a wit..generic wheat flour is actually quite OK))
mash at 66
hop to 20 or so IBU (higher if you must !) with Saaz or EKG
toss in some cardoman and coriander seed , cracked first in the mortar and pestle at the end of the boil with some orange peel or even a small knob of grated ginger
use WLP 410, a corker of a yeast not too phenolic but quite spicy

you should end with about 25 litres at 1030 ish

I wouldnt have a clue how to mash!

I will be doing a demonstration again at the Harmonie German Club in Narrabundah in January..date to be confirmed. We will drinking the porter I made there in November.
