Brewing Mythbusters!

I've pinched the idea for this thread from a mountain bike forum I am on - Simo knows what I am talking about.

Lets put up a myth, and whether it's true or not.

Like if you leave a brew in the fermenter long enough, the yeast stops eating sugars, and eat themselves.

Not true - how else could we culture yeast from various commercial beers?

Please put them up guys.

I reckon the biggest myth is that beer is frequently ruined by infection.

As I say in this thread: http://www.homebrewandbeer.com/forum/vi ... php?t=1779 I reckon that infection is actually quite rare, providing sanitation is fairly good. And as has been pointed out, some people who are sloppy with sanitation, to say the least, still brew some quite good beers.

That's my brewing mythbuster.

Cheers,

Oliver
