I would like to head towards using glass demijohn for looong secondarys but I imagine racking to a priming container is difficult....

No air can get through... so you can leave it sit for a long time (well that is what I read) got to be carefull when sanitising though! (crack!)

i've got two carboys ( one is bunnings cheapy ).
also 2 pails.
the cheapy carboy is for Racking/Bulk Priming and Ginger Beer, the other is a Secondary.
the Pails imo are great, no 'o' ring or thread to worry about, easy removal from the brewbox because of the metal handle, large opening for easy cleaning.

I've got five 30ltr plastic carboys going at the moment and two fifty ltr sitting idle .
The only reason the two 50's are idle is because where I make the brew to where I let it sit is too great a distance to carry such a heavy barrel .
Something I'm going to have to work on this year

I'm on a special alcohol diet ,
It's really amazing ,
I lost 3 days in the first week ! !

I've taken mass production on board.
I use plastic barrels, 25L with screw cap and tap at the base. I ferment with these with a bubbler in the cap. then i rack to another plastic barrel for secondary fermentation. Then i go from the secondary barrel into the keg.
I currently have 7 barrels in secondary fermentation stage, and i am putting another 4 into primary fermentation this sunday. I have converted an old shower recess into a beer storage, fermenting room.
This gives me 140L available for the 1 month storage phase. Once these last 4 beers are done, i will be fermenting one at a time, as i use a barrel.
I have also allocated room for 4 fermentors worth of stilling fermentation in my room, which will start as soon as these next 4 are out the way.
In total i have room for 240L of beer in storage (1 month storage), and 80L of stilling ferment.

I am currently working on two stainless conicals
I like the glass from a sanitry and gas permiability point of view plus I can see whats going on.

My three plastic fermenters are usually enough, because I only brew for myself, and generally only need to brew every 3 weeks.
But I got a 30 lt DI-water drum off a friend who uses chemicals in electroplating. It is a square type plastic drum. I drilled a 12mm hole in the lid, and fitted a grommet. There was a bung in the bottom, which I replaced with a tap. Can't get hand in to clean, but I've used it a few times as a secondary.

The only place i have seen them in Melbourne is Grain and Grape.Cheeno wrote:Anybody know where I can get a pail fermenter in Melb. Metro. The local HBS seems to only stock carboys
I use two pails. They are easy to seal, no o ring, no thread and the straight sides make them easy to clean. I would never go back to carboys even if given one!!
