Honey Porter

Sometimes it is hard to go past an old favorite and every time you make it, it just seems to get better. So here is probably my favorite:

1 can Cascade Mahogany Porter
1kg Dark dry malt extract
500gm of Yellowbox honey
20gm Cascade hops (dry hopped)

Dissolve DDME and contents of can in boiling water. Add honey and boil for 5 minutes. Add contents to fermenter and make up to 22litres with water that has been cooling in fridge overnight.

Add 20gm of Cascade hop pellets. Pitch Safale yeast at about 22 to 24 degrees. Allow to ferment out. This may take over 2 weeks because of extra fermentable sugars from honey.

Bulk prime with dextrose and bottle. Leave bottle to mature for 3 months and then see how long the batch lasts......not long at my place.

Is this just the normal Yellowbox honey you buy from the supermarket?

That's it, just plain old yellowbox from the supermarket, but any good quality honey will do the trick.

Hey Wassa, What yeast? As supplied with the kit or Safale?

Just re-read your post. You said Safale, so I'll assume S04?

I have made it with both. The yeast provided is an ale yeast and to be honest I couldn't tell the difference bewteen the 2.
