I am just about to bottle my mex cerveza tomorrow and by then it will have been in the fermenter for 17 days. I used dry enzyme and just 1kg of brew enhancer (glucose/corn syrup) and on today's taste test, it is not too sweet, but I do still note a hint of cider in there, which I'm hoping will either go with maturing in the bottle, or be unnoticeable when drunk chilled.
I am very pleased with this brew. It is a little bit cloudy though...not too much so, but something I would like to work on. Again, maybe this will clear when bottled and carefully poured. I know that the answer for this is racking, but I only have one fermenter at the moment.
I took a hydro reading today (1.002). If it hasn't changed by tomorrow, I'm bottling. Then I'll do the cold condition in bottle after 2 weeks. Projected alcohol % is around 5.5 - 5.6%
