any recipe suggestions - golden-amber or red ale

Hi folks,

I'm looking to brew either a nice golden-amber ale next or a red ale (I love Mcaffreys irish red).

Can anyone recommend a recipe or a kit or combination of both...?

Ash's recipe

1.5kg Morgan's Pale liquid malt
500gm LDME
250gm 145ebc Crystal malt grain
16gm PoR for 60min
10g Amarillo for 15min

Brewing notes: Steep grain for 30min in 3l water, rinse with 1.5l boiled & cooled water into pot. Stir in 500gm LDME & bring back to rolling boil, add 16g PoR for 60min & 10gm Amarillo for 15min. Stir in 1.5kg malt tin at flameout.

Using chilled water to get down to pitching temp.

Calulated out to end up at approx 3.5% alc & 21.5 IBU, so a hoppy little low gravity beer (est starting grav ~1.035).

I just put in the Amarillo 5 min ago, will report back as I go.

This is my first attempt with specialty grain & boiling hops, will report back with progress. A very helpful HBS owner (Greg @ Homebrewer's Warehouse) helped me piece this one together so due credit to him, though it was made up on the spot! (he picked the Amarillo & did the calcs for the boil, which matched my online calcs to within 2/10ths of stuff all).

Hope it works out, meant to be a summer quaffer. just using an ale yeast, lagers are a PITB


Edit: OG 1.030, final volume is 20l

What Boonie did......

1.5kg Morgan's Pale liquid malt
500gm LDME
250gm 145ebc Crystal malt grain
16gm PoR for 60min
15g Amarillo for 45min
15g Amarillo for 30 Min
15g Amarillo for 15 Min
Yeast was a leftover Coopers Pale Ale yeast Should be OK I hope

Brewing notes: Steeped grain for 1 hour (Waiting for mate to turn up to show him....LOL) in 3l water. Stir in 500gm LDME & bring back to rolling boil, added hops as per schedule above. Stirred in Morgans Pale Malt Liquid at flameout.

Using chilled water and ice to get down to pitching temp to 22 degrees.

Starting Gravity 1035.

Made to 21 litres as I could not get to tap fast enough

Racked 1 week later and added 15g of Dry hopped Amarillo

My Kilkenny Klone / Irish Red recipe is:
4.2kg of Maris Otter
250g 145EBC Crystal
60g Roasted Barley
1tspn of Gypsum in the mash
34g EK Goldings for 60 mins (A/A of 5%) - 22IBU
Wyeast 1028 London Ale or 1084 Irish Ale yeast
For a partial mash, just halve the MO and add a pale malt kit (highly recommend Muntons Yorkshire Bitter kit if you can find it).

just a few questions (I'm just learning all this...)....

What is LDME?
I'm assuming Amarillo is a type of hops - how easy is it to find this in Melbourne?

Also, what is meant by "flameout" - the point where you add the kit stuff?

Boonie, are these recipes for an amber or red ale?

and the crystal malt which you need to steep.

If you want a simple and nice amber ale, go any nut brown ale kit, add a 1.5 kg tin of amber malt extract and either some fuggles or east kent goldings hops. I made one without hops and its nice, but needs hops to make it a good beer.

Yep the Doc is right, it is an Amber.

I'll try and explain it how I liked it to be explained when I first started. The lingo is confusing in the beginning. :oops:

This recipe does not include a Concentrated Kit with Hops Yeast etc...

1.5kg Morgan's Pale liquid malt (The can is brown and will say "Unhopped Malt Extract) ie No Hops added at all by the company

500gm LDME (Light Dry Malt Extract purchased at HBS or Big W has Coopers Malt in 500g bags) Refer stickys, you will get used to the lingo

250gm 145ebc Crystal malt grain (This is proper grain that can be purchased from HBS and they will crack it for you.)

16gm PoR for 60min (POR=Pride of ringwood hop)
15g Amarillo for 45min (Amarillo is another hop)
15g Amarillo for 30 Min (Ok I like Amarillo)
15g Amarillo for 15 Min (OK that's alot of Amarillo :lol: )

Yeast was a leftover Coopers Pale Ale yeast Should be OK I hope (Purchase a yeast as you are not buying the "kit" complete with yeast....You can try a Morgans Ale yeast)

Brewing notes: Steeped Cracked Crystal Maltgrain for 1 hour in 3 litres water.

Stir in 500gm LDME & bring back to rolling boil, added hops as per schedule above. Stirred in Morgans Pale Malt Liquid at flameout (when you turn the heat off).

Add your mix from the pot to your fermenter.Using chilled water and ice to get down to pitching temp to 22 degrees.

Starting Gravity 1035 (Using Hydrometer before adding the yeast)

Made to 21 litres as I could not get to tap fast enough. Try 20 Litres.

Print this off and take it to your HBS and they will help you.

If you are just starting and feel that you just want a basic to begin with (like most of us did) do Docs recipe.

As you get used to it, you experiment more and more.

In the last 6 Months, I have only made 1 beer more than once.(my LCPA recipe)

Maris Otter is a high quality genuine british pale ale base malt - it's available in good HBS who stock a decent range of malts. Eg, Grain and Grape, Grumpys, etc etc and the brewclub I'm in does bulk buys and we purchase it at very reasonable prices, in 25kg bag lots - along with other grains from Weyermann, Powells, Joe White etc etc.

I went to a HBS here in melbourne and they didn't have Amarillo Hops. Although the young guy behind the counter said he didn't know why, 'coz he liked them!

Does anyone know where/who in Melb stocks Amarillo Hops?

At this stage, I'm probably gonna modify the recipe a little (experiment, experiment...)

I bought Brewcrafts James Squires Amber Ale kit, which is basically Muntons Blonde, with a tin of Black Rock Amber Liquid Malt Extract, Safale Ale Yeast, and 5gm of Golden Cluster Hops; then I'm gonna add an amount of the Crystal Malt (haven't decided yet)...

My question is: should I add some more Hops on top of this? Does anyone recommend whether I should add for bitterness or aroma? If so, which Hops?

I'm also planning to get some of the Head Improver stuff, 'coz I'm looking for a nice creamy head for this brew - any recommendations, warnings, etc?

It was Brewcraft in Oakleigh South.

I'm heading up to the Heidelberg shop this arvo to pick up some head improver, maybe some more hops and steriliser stuff....

Any suggestions before i go?

I picked up 350g of hops, plus a few sachets of yeast for about $35 including next day delivery (QLD to SA). The hops are vacuum packed so last a long time in the freezer/fridge. Doing this i got enough hops for at least 4 LCPA clones and 2 JSGA clones and they are easily the best brews i have.

i doubt any other HBS will have the range of hops that Ross at craftbrewer does.

OK, so this batch is now on the go.....

Here's what I ended up doing:

Bought the Brewcraft James Squires Amber Ale kit (because I went shopping without my shopping list - didn't matter anyway 'coz they didn't have the Amarillo.... sorry Boonie, but thanks anyway!)

1x Muntons Blonde kit
1x Black Rock Amber unhopped Malt
250 gm Crystal Malt
250 gm Corn Syrup (maltodextrin)
1/2 packet (~12.5 gm) Goldings Hops
5 gm Golden Cluster Hops
1x sachet Safale US-56 yeast

I let the crystal malt steep for an hour as I did everything else, keeping at steady temp of 67-70C. I put the Muntons in hot water first, then after a while of stirring at constant temp of ~67C, added maltodextrin. Then added the Amber LME.

Put the Goldings in water, boiled then simmered; added Golden CLuster, and left for another 15 minutes. I then just added the hops into the brew, deciding not to strain it. I then put the brew into the barrel, strained the grains out of the Crystal Malt tea and added.

I filled up barrel to a little over 21 litres. Took a while for it to cool down enough to add yeast, kept it in bathtub with cold water, ice packs nd wrapped in wet towel.

The OG was 1.046 (hope I read it correctly...), then added the yeast.

At this time it has a deep colour, looks almost like a dark brown in the barrel, but appeared lighter in the test tube. Has a nice malty aroma, and didn't taste that bad either (I just had to.....)

I'll keep y'all posted on the results as they come.....
