Using Improzyme Liquid - to bottle or not to bottle?

Hi All,
have had a couple of goes with the dry enzyme powder and with the experience from the first brew and some ideas from this forum got the message loud and clear that you had to wait until the final gravity is 1000.
No explosions as I used pet bottles but pretty exciting when you opened the bottle!!!
Put down a coopers recipe sparkling ale with improzyme liquid (first time user) this time and after two weeks it appears to be stuck at 1006.
To bottle or not to bottle that is the question?
