My dunkelweizen experiment

Hi all,

Just chucked one of these down and I'm quite excited about it. I've just racked a weizen using 3068 yeast and I wanted something to throw on the yeast cake. I got a Brewiser Wheat kit from Big W so decided to experiment. Here's what I did:
  • 50g Choc Malt
    200g Crystal
    100g Rolled Oats
    6g coriander seeds
    150g Yellowbox honey
    450g LDME
    6g Tettnang
  • Steep the grains and oats at about 70deg for 45 mins. Drain and sparge
    Bring to the boil with honey, coriander and LDME. There's about 4 litres volume at this point.
    When at the boil, add hops and boil 10mins
    Add kit, top up to 19L on top of yeast cake
The qty's of honey, hops and LDME were to get rid of leftovers, hence the arbitrary measures. Not sure of the alc vol on this one but I'm expecting it to be fairly low.

mmm, one of my favourite styles :) you should chuck in some belgian candi suger or some other kind of rock suger ;)

There's always next time. I'm actually aiming for a style similar to the Macedon Mountain Ale.
