OK...I found this recipe for a hefe weissen:
4 kg Weyermann Pilsner
0.08 kg Weyermann Carapils(Carafoam)
0.04 kg Weyermann Caraaroma
20 g Hallertauer (Pellets, 4.2 AA%, 60 mins)
10 g Saaz (Czech) (Plugs, 3.3 AA%, 20 mins)
1000 ml Wyeast Labs 3068 - Weihenstephan Weizen
0.25 tablet Whirfloc
For a 20L batch. I would like to make this more of a dunkel is this a good base or way off? Any suggestions are welcome

I'd use some wheat grains in there somewhere.... about 55% if you can...
If you want to shine away from hallertau and saaz, you could always use tettenanger or hersbrucker hops, which go well in a wheat beer...
That recipe looks like a pilsner recipe except for the yeast....

Thought so too but it was the only AG I could find
Was sure there must need to be wheat somewhere but wasn't sure how to incorporate it. As for the hallertau and sazz, I use a fair bit of them so any alternative that still gives an authentic drop is great in my book!

there are heaps of recipes on the Net... alot of them have comments too so you can see how they went...
just type in dunkelweizen recipe, or something similar and you're bound to get a few you can try

I did find this recipe. I think I will have a go. Looks pretty simple and uses alot of JWM so it is fairly inexpensive for this style!

Just opened the first longneck of a wheat beer brewed 3 weeks ago.
3 kg wheat malt
2 kg pilsner malt
.25 kg vienna malt
.25 kg melanoidin malt
Mashed at 66ºC. OG 1052 FG 1010.
Hallertau 2.1% AA to about 20 IBU.
21 litres.
Ross' dried wheat yeast.
Can't detect any real banana or bubblegum, rather spice or cloves. Very refreshing.
