Sauvin hops recipe

Sauvin hops recipe

Had a Knappstein Reserve lager the other day and really enjoyed it, so thought I'd try my first all extract recipe with some of the Sauvin hops:

2.5kg LDME
25g Sauvin hops for 45 mins
25g Sauvin hops for 20 mins

Would the addition of any grain add much to the above?
Given I'm not using a kit is 50g enough hops?
Suggestions for an appropriate yeast? I know the Knappstein is a lager, but I don't really have the conditions to use a lager yeast.

Download Beersmith (www.beersmith.com) & check your IBU with that.

Just on bittering with NS, I find it can be a little rough. You may like it. But if you go over the top I find it gets a little grapefruity. I prefer to use it later in the boil.

Hmmm, does the Knappstein just use Sauvin hops, or another hop also for bittering? Not having used the Sauvin hop, I will not venture on how much to use... it is so unique that I guess you would need to ensure it doesnt become over powering.

I would probably add some pilsner grain into it, and I would also add some wheat malt also - it is a pale beer and so I would follow the same list of ingredients to a Coopers PA in some respects. Don't worry about removing and of the LDME though, I woudl chuck in about 500g wheat malt and maybe 50-100g of pilsner grain. The beer is quite strong - 5.6% so you woudl need a fair bit of fermentables.

I would try to get a lager yeast, I dont know where you are so don't know your temps - but in order to suit the Sauvin hops, I believe you really need a crisp, clear finish. The fruityness comes from the hops, not from the yeast so I think I would try and lager it if at all possible - I dont know how it would go as an ale... in saying that - there is only one way to find out! :twisted:

Pretty sure the Knappstein is all Nelson Sauvin (and all pilsner malt)

4.5 kg Bairds Maris Otter Pale Ale Malt
0.4 kg TF Torrefied Wheat
15 g Nelson Sauvin (Flowers, 11.4 AA%, 80 mins)
15 g Nelson Sauvin (Flowers, 11.4 AA%, 20 mins)
20 g Nelson Sauvin (Flowers, 11.4 AA%, 5 mins)
15 g Nelson Sauvin (Flowers, 11.4 AA%, 0 mins)
25 g Nelson Sauvin (Flowers, 11.4 AA%, 0 mins)
15 ml Wyeast Labs 1056 - American Ale
Directions:
15gm 0 min addition = mash hops - 25gm 0 min = added 10 mins after flame out & steeped for 20 mins before chilling. Yeast = Dried US-56.
Mashed cool at 64c final gravity 1010 = 5.2% Alc.
This is the basis for all my Summer ales - A great way to really test a single hop variety. The 90gm fits perfectly with the CraftBrewer pack size.



So you could use your LDME, a bit of liquid wheat if your inclined.

But gives you an idea of keeping all the additions to the end.

Finally got around to putting something down with my Sauvin hops tonight.

2.5 kgs of LDME boiled for 60 mins
25g Sauvin hops for 45 mins
25g Sauvin hops for 20 mins
10g Sauvin hops at flameout
150 g caramalt steeped for 60 mins.

Made up to 20 lts and ended up using a Saflager-23 yeast. It's pretty cold of a night here at the moment so should be OK. Very hoppy aroma going into the fermenter, so hope I haven't overdone the hops :shock:

Read somewhere that the Knappstein has a late addition of Tettnager (sp?) hops so may dry hop with these.

Any thoughts from anyone??

Knappstein is all NS hops & all JW Pils.malt.
