Chimay Clone

Post by TommyH »

OK I know this has probably been asked a thousand times but.
Is there any enhanced kit recipes that will come anywhere close to a chimay blue?
My wife just bought me two bottles of this wonderful nectar (isn't she nice :) )
and I want to culture the yeast and attempt a clone.

Any thoughts anyone?

start on this page. use CTRL+F in your browser to search for "Chimay" and you'll see some discussion begins half way down the page.

the biggest 2 things you can do to help get the flavours you need is use the correct yeast (as you said above), and use candy sugar for that belgian flavour.
