North West Pale Ale

Made a brew yesty.... Based on a beer made in Washington State, (not in the pilbara).

3kg light dry malt extract
500g crystal malt
200g carapils
2oz centennial (60mins)
1oz cascade (15mins)
1oz cascade (5mins)
US-05 yeast

I'll tell you how it goes...

smelt intensely citrus and i think judging from the ammount of hops i used, i might be more like a IPA/ESB rather than a standard American Pale Ale... I tried to counter act the harshness of the hops by adding the crystal... Its also a little warm in WA at the moment, so the brew is fermenting at a little over what i would have liked, but i'm confindent about this one....

American Ales are typicaly a bit more estery anyway so you should be fine there.

The recipe looks great though. I may have gone with a bit less Crystal and added a touch of Chocolate but otherwise that looks similar to Amber Ales I have done.

As for the hopping, what sort of boil did you do? Looks like you may have one very bitter beer there ;)

i boiled 500g of malt in 4L of water, boiled and added the hops at the required times, added the rest of the malt at the end, cooled, and added to the fermenter and made up to 23L.

Initially the recipe i was basing this brew on didnt ask for any crystal, but i thought i should add some, i also didnt change the hop ammounts that they had put.

I think the crystal was a good move, it should help to balance a bit of the bitterness.

I think with a boil gravity like that you are looking at about 75 IBUs! :shock:

I've created a monster.....

I bottled and tasted out of the fermenter... was very hoppy... i think cooled down a little and after a few months to settle down, it should be a really good drop.

The only thing i'm disappointed about was the fact that it brewed a little too warm and i can taste some fusels... Hopefully they might mellow over time too.... fingers crossed...

Speaking of creating monsters, i created another one so i could use the yeast from the brew before.

Amber Ale
3.4kg Amber Liquid Malt Extract.
1/5oz Centennial (10%) 60 mins
1 1/2oz mt Hood (4%) 30 mins (the aa% were a little low on this batch i got usually you only need to add 1oz of 7%).
1oz Willamette (5%) 15 mins

4L Boil with 500g malt.

23L volume.
