Pale Ale Idea

I know Pale Ale has been done to death but I've got two tins that I got cheap (both are out of date).

So i need to get new Yeast and spice it up a little. This is what I was thinking

CPA Kit
1kg LDME
150g Crystal
10g Amarillo @ 45
10g Amarillo @ 15
10g Amarillo @ flame out
SAFale yeast at 16c

Do i possibly need more fermentables (i've follow the K & K rule)

I wouldn't mind trying a different hop with any other suggestions.

This would be my first time using crystal so what do i need to do with it?

Soak crystal in 1L of 65C water for 30 minutes, rinse with 1L 75C water into kettle. Top up with 2L and add half LDME to the boil. Once you get a rolling boil add the first lot of hops.

I would change the additions to:

10g @ 60 min
15g @ 20 min
15g @ dry hop in secondary or keg

Otherwise looks good!

As you said you wouldn't mind trying different hops, you could try substituting some of the amerilo for cascade to give a more complex flavour. I for some reason or another can't help myself and always mix my hops up, and cascade and amerilo go hand in hand for me.

Whats that age old question - ask 2 brewers a question and you will get 3 answers.....

My suggestion would be to use the hops this way

10g @ 60
15g @ 10
15g @ 5
15g dry hop

I have combined amarillo and cascade. Used the higher AA amarillo to bitter and flavour and then used the cascade for aroma. Tasty drop.

I would completely drop the 10g Amarillo @ 45. Amarillo is around 8% AA, so that plus the bitterness from the kit would make for far a too bitter beer. Just my opinion, I know some ppl on here are almost shooting up their Amarillo these days. :P

I normally do my CPA with Goldings for flavour. It's beautiful and subtle.

You can shoot up hops? I prefer sniffing. Hops are stored in the freezer in the bar so i can sniff away from prying eyes. :D

10g @ 60 mins should add only 10-11 IBUs so not too outrageous......

the addition at 10 and 5 (in my recipe) add another 10 IBUs (based on boil gravity of 1.047).

I am guessing the kit is around 20-25 so a total IBU of 40-45 is fine for an APA.

But i agree, goldings is very nice in an english ale. I dont do subtle all that often. I just cant resist amarillo..... <sniff?

I've done Amarillo with the CPA and Cascade, seperately and together.

I actually preferred the singular Cascade batch :shock: ....I know, sorry doc......I prefer the Amarillo in my wheat beers, twas still nice, but the cascade itself was better.

I did 10g for 15min
10g for 5
Dry hopped 10g at rack

Edit.....Oh and also 1KG LDM was added :oops: Basic K&K with additions :D :wink:

Dont apologise Boonie - i made 2 batches yesterday (sick day - cough, cough) and one was all amarillo, the other was the LCPA recipe. I still have a soft spot for cascade and there is always some in my freezer. Opening a pack of cascade plugs and having a good long whiff. Thats the stuff. I might have to start bring along a few to work to get me thru the day......

Do you use the NZ goldings or the UK goldings? would you have a recipe... i'm looking for something different... i have a can of CPA and i have a heap of NZ goldings..

:lol: :lol: You do look very ill from where I am sitting :wink: ......Maybe you could get a Chaff Bag from the stables, fill with hops and sniff it all day....

I use UK Goldings, but I'll be using my own-grown ones when they're ready. ;)

Give the NZ ones a go, I don't think you could go far wrong. Do you know what the difference in their flavour profile is?

My first version was:

Coopers Pale Ale tin
1kg LDME
150g JW Light Crystal
100g Carapils
15g Goldings @15

Even my GF liked this one, and she doesn't like beer.

My latest version (went into the keg yesterday) is more designed for my tastes than hers:

1 Can Coopers Pale Ale
1kg LDME
200g JW medium crystal
20g Goldings @ 15
12g Goldings @ 5

So yeah, take your pick.
