Taste testing

Well not exactly happy with the kits iv been doing.
But not knowing what hop to use, I went and bought some beers for a taste test.
1)Coopers pale ale- Very nice, easy drinking, POR not overpowering for me so maybe POR for hops.
2)Coopers sparkling ale- same as above.
3)James squire amber ale- strong, nutty type of flavour but carnt find what hops is in it.
4)LCPA-wow very grapefruity tast, maybe too srtong for my liking for an every day type of thirst quencher.

Still looking for a JSGA to try a amarillo type hop.
Can anyone suggest any other type of beers for a taste test for me?
Can I simmer down the hops used in the LCPA clone?
I once tried a coopers draught with a POR tea bag steeped for 10 min then in the fermentor but tasted nothing like the coopers with POR. Why?
Any help appreciated.

I haven't been using hops for very long(about 6 months) but with POR I've found they need to be boiled for at least an hour, not sure if the t-bags are the same but i don't see why the would be any different. Even after an hour's boil the bitterness is not overpowering, it's actually quit nice. I'm sure though that others will have alot more info for you

I too prefer only early additions of POR. Not sure what hops are in JSAA sorry. LCPA is Chinook and Cascade I believe? I would try a Knappstein Lager, very nice balanced beer with Nelson Sauvin hops.

Definitely try the Knappstein, lovely beer. Maybe try some english ales (Fullers, Newcastle Brown, Old Speckled Hen). I find JSAA dull and boring, a watered down version of an english ale.

You cant clone Coopers Pale without using the yeast from a few stubbies of the real stuff. And no late additions of POR, CPA is a malty beer, not hoppy.

CPA is amost entirely pale malt, 1% crystal, 4% wheat and about 20% cane sugar. That's how they get it so pale. And yeah, the yeast, and early PoR.
