just wondering what the consequences are for brewing t-58 yeast at 16-17 instead of 18-20, do you not get the full effect and taste of the yeast??

it'll be more mild in terms of the fancy flavours the yeast throws - spiciness etc.

And you may get a much slower (if not stuck) fermentation.

its actually been fermenting at 18 for the last 5 days and just dropped back to 16, so hopefully the first 5 days have got the most out of it.

i fermented a T-58 brew at around 25c.. the yeast characteristics are quite apparent, but not unpleasantly so.

The best way to tell is to take a hydro reading. If in the 1010 region (or lower) it is a great time to drop the temp anyway.
