How long can I leave It?

I have a keg set up and am wondering how long after transfering from the fermenter to the keg,can I leave the beer in the closed keg before I gas it?Or does it start going off straight away because air has got to it and it has not been burped?I have left one for about a week once and it tasted O.K.Some advice on this would be great as I am looking to increase production.Thanks

You can leave it for a few months. After you transfer the beer to the keg make sure you purge the headspace though or the oxygen really will spoil your beer. To do this, just attach the gas to the keg, then burp the keg through the blow off valve. This will replace the air in the headspace with CO2 and then you can happily store the beer in or out of the fridge much like you would in bottles. It will age faster than in bottles, but not ridiculously so.

You might also consider naturally priming it if you're going to be leaving it outside the fridge for an extended period anyway. Will save you a bit of gas.
