Dunkelweizen Help

I plan on doing a partial for a Dunkelweizen and am just after a bit of advice as to what quantities of the grain I have on hand should be used.

Here's what I got (thats relative anyway);

crap load of LDME
500g caramunich 1
500g caramel wheat
500g munich 2
1kg flaked wheat
plenty of choc malt
plenty of carapils
(and the not so relative bits and pieces like) med crystal, roast barley, cara amber, caramalt, brown malt

It will be around the 22 litre mark, Craftbrewer weizen yeast, will be hopped with either Hersbrucker,Strisselspalt or Tettnang, have not decided yet as I don't have any of these hops and will prolly go with one i will use again shortly.

Where do you plan to get the enzyemes from for the mash? Munich II has enough power to convert itself but wouldn't get too much work done on the flaked wheat. I would use 300g of caramel wheat and forget the caramunich. Maybe 50g of choc for some extra colour. A further kilo of a good strong pale malt should get through the flaked wheat, but run off will be a nightmare without rice hulls.

I'd tend to sub in wheat malt for the flaked wheat. If nothing else, at least it would conform to the purity laws....

I'll be doing TL's partial method so run off isn't really an issue. I could mash the flaked wheat on it's own (say 500g), or would this be overkill on the wheat, if there is such a thing. I can get my hands on half a kg of marris otter to go with the flaked wheat but I thought being a british malt it might not go well in the recipe

You are probably going to have quite a bit of protein haze in that brew. As long as you don't mind I wouldn't worry too much.

Half a kilo of MO should be enough, make sure you do an iodine test and have some extra malt handy to be sure.
