As with you, my missus was not happy with my other activities – so she bought me a HB kit as a new hobby. Now I am all the way into all grain and spending an increasing amount time in the shed – she rues the day she invested in my new hobby. hehehehe

My granddad was a huge stout fan, I am developing a taste for the ale – but in small doses. I have been using this recipe for 5 batches, all the credit to Papazian from his book “joy of homebrew”

The important thing is you are back on the wagon.

Stout is the greatest beer for long-term storage I have ever made. I have some that is nearing two years old, and it is fanatic. It just gets better.

This is terrific, as I only have one every so often – I have to be in the mood for the dark ...

Well my advice is to not give up just yet BrewHaus. Time must be given.

Most beer, when bottled, will only come into it’s taste range after two – three weeks. And most deeper coloured beers after two – three months.

I always open a stubby with new brews to test them out and see how they are ...

The beer style sounds interesting, a special occasion beer.

I don’t have a recipe. But I will be keeping an eye out for responses to your post – perhaps we will both have a nice brew at Xmas to try.

I expect that temperature, at all stages, but certainly at fermentation will play a real part ...
