I was able to brew it at Uni Oliver so I am lucky to be able to use the equipment :D
I did taste it Weizgei and it tasted fine :). In fact I tasted some this morning (I'm doing NTU readings every week for analysis at the end) and it tastes great!
I think the problem was with the mash equipment ...

Also, we have the fermentis Safbrew WB-06 yeast on hand at uni, will that do a decent job?

Thanks for the idea's guys! I was thinking about a hefe but wasn't sure on bottle ageing times.

Glad you're enjoying the recipe. I've actually left the ag recipe as per the recipe posted earlier in this thread. I find the extract version a bit too sweet now and enjoy the ag version much more.

Finally bottled this brew yesterday. It went right through to an FG of 1002 :shock: . I had assumed that it would stop around the 1010 mark, my bad i guess... Looks like it's around 6.6%... Tasted pretty bloody awesome though. Can't wait for it to be carbonated!! Tasted so good I'm even shipping a ...

I hope it turns out pretty serious Guru! It's actually meant to be a slightly 'lighter' ginger to soften the blow between bottles of the scratch ginger I just bottled. That started at SG 1092 and, after having to re-inoculate with some EC-1118 at 1030 because the US-05 had crapped out at this point ...
