At what day in your process was the temperature at 29º ? I'm of the opinion that if you keep the temperature in check for the first few days when the gravity is dropping (hence when the alcohol is being produced), it's probably not so tragic if there's a heat-spike later in the ferment. No ...

OK, so Ive hopped up the wort a bit more, I have added the candi sugar after dissolving into a liter of hot wort, and hoping for the best. This ones going to be racked and then bottled in a couple of weeks then left for 3 months to bottle mature if I can wait that long.

As for an expensive extra fermenter, it's not really, I already have the barrel, it was given to me for free - cant complain about that price. Although a $40 tap brings the price up, I am thinking about the future uses already. And I'll bet that even as a primary ...

Mate, that's awesome information. And great pictures. To be clear, are you talking about drilling into the barrel for the purposes of fitting that funky thermometer ? And not the tap - or does the 'ballvalve tap' need to have some drilling done?

Thanks Kev. I have made what I think to be some correct hop adjustments and by all accounts it should come out at around 25 IBU.

While on the subject, I want to feed the brew some candi sugar that I blended to a powder over a few days, and wonder if its a good idea to tap off a litre of the wort ...

Ah ok. Are you taking into account the IBU of the can itself ? (Brewmaster Belgian Ale - a Rebranded Muntons).

I had better add some more hop tea very very soon (like tonight !)
