joy of formulation

Postby speedie » Monday Aug 16, 2010 7:43 pm

It is always a joy to put together a new batch of brew and after all these years of brewing an I am still amazed at the final product
I will say though that recipe formulation is one area that brewing needs but you all would be surprised at how the use of yeast will alter the overall taste of beer
I have done say a four hundred litre brew then split it into three different fermenters pitched three different yeasts and produced three total different brews from the same base wort all very good beer in its own right
People on blind tasting comment on how different they taste and don’t believe that it
Is the same base
The beauty of all grain mashing is that you can build what hits you’re fancy
It seems that a lot of people try to emulate what main stream brewers put out personally try do be creative when brewing a bit of this a bit of that oh those old hops in the cool room should belt them into something etc
I think that the most difficult thing to produce and repeat over and over again is old fashion lager as it is not a forgiving style of brew and a lot of faults can come through in the wash i.e. poor milling bad lautering incorrect temperature range bad yeast management incorrect ferment temperatures etc not so much like stout or any of the more heaver styles
We just finished brewing 440 liter batch of lager this weekend five on the brew team it was all pale malt, nz hallertau hop, 34/70 yeast, good old Fremantle water and lots of love
Ended up with 12 degrees Plato 33 IBUs extract @69.5%
180 liters at ferment temp of 9 degrees the rest at ambient which is about 15 at present here in Perth
Will post more on tasting time
Generally pretty happy with things so far
Cheers to more beers speedie

440 litres, that's some home brewing for you!

Or are you a micro, boutique , or a pub brewer?

I agree one of the most enjoyable things about brewing is designing your own recipe, and having it turn out great.

Any chance you could learn some grammar/punctuation during these chugging sessions?

I've skipped most of your posts to date as it hurts my head trying to read them.

Yes, but it would be easier to learn something from them withthe occasional full stop and new paragraph. Especially when I write longer posts I find they help me to organise my thoughts into 'digestable' chunks and hopefully help others to understand them as well.

Side note, you may learn something from drsmurto as well. I know most of us here have.

Without sounding brash or offending anyone especially you learned dudes, can either have you produce any certified awards or accolades for your brewing endeavours
I.e. homebrew club wins and or any state titles that you may have won
Do you belong to any affiliated groups or are you just the mavericks of cyber space!
If this does upset you because you are both the gurus that present to the forum your best knowledge I will be more than humble and never chat on this site again
Yours brew fully speedie
Ps the only reason I had a hit on this site is because it is Aussie!

Actually, the above was just a bit of a laugh on my side but now that I think about it this is pretty annoying.

So your suggestion, speedie, is that I should be obliged to endure endless gibberish and grandstanding on your part if I don't have more awards and years as a member of a HB club than you do? Pull your head in and contribute something of worth rather than just demanding some sort of respect because you're old and use the Royal "We" for no apparent reason.

Speedie, Much of the information you provide is probably valid however same as in life you need to earn the respect of your peers much like drSmurto, warra & many others in here have. I'm sure you don't burst into a room and blurt out a heap of info without knowing your audience? Hopefully this is just a case of poor internet ettiquite (spelling?).

This is a place we can share a common interest away from the daily crap.
In future just chill out and provide some good info / help without the bullshit stories and waffle.

/End of rant

Cheers, Mat.

I am a genuine home brewer that has attained acceptance in the wa micro association I prefer to be incognito at present but if you have any specific questions please post me
There seems to be a lot of tin gods on this site who take any opportunity to put someone down!
If I can help just one more person to become a better brewer it is for the best!

I did ask you a specific question but it seems to have been ignored out of hand - which says more than any answer ever could.

Speedie that statement is utter crap.
This site is the best for new brewers as it is smaller and more personal than the monster that is AHB. (not that there is anything wrong with AHB but it can be quite daunting for a new starter)

I have never seen anyone been put down.

As I said before earn the respect.

matr, I think bum's concern is that you may have unwittingly unleashed speedie upon AHB...?
