AG Honey Porter ?

With the warmer weather here & Ales back on the list.
Ivé been think'n about a porter or a Tooheys Old clone for the first time.

This is what Ivé scratched up at the moment, what do you guys think?
(I'm considering cutting the Crystal back to .25Kg & adding .5Kg Wheat Malt)

2.50 kg Pale Malt (6 Row) US (3.9 EBC) Grain 47.62 %
1.00 kg Munich Malt (17.7 EBC) Grain 19.05 %
0.50 kg Aromatic Malt (51.2 EBC) Grain 9.52 %
0.50 kg Caramel/Crystal Malt - 10L (19.7 EBC) Grain 9.52 %
0.25 kg Chocolate Malt (886.5 EBC) Grain 4.76 %
20.00 gm Galaxy [13.00 %] (60 min) Hops 26.2 IBU
12.00 gm Amarillo Gold [6.50 %] (10 min) Hops 3.2 IBU
0.50 kg Honey (2.0 EBC) Sugar 9.52 %
S-04 Ale yeast

Hey Mick,

Looks good, but I would tend to use cascade instead of Amarillo. Cascade + honey work really well together, especially in the benchmark Honey Porter (i.e. Wassa's)....

I brewed this a few weeks ago with a couple of tweaks,

1. Dropped .25 Kg Crystal & added .5Kg Wheat Malt as suggested above,
2. Cut the bittering addition back to 18g (same as ussual for the same PBG)
3. Also upped the Amarillo to 25g (thx Timmy but I didn't have any Cascade)
4. I used Wyeast 1318 instead of S-04 (no S-04 at the time)

I bottled it the other night after Racking & C/Cing for a week.

Fg was 1.009 from an OG of 1.044
Tasted OK but it seemed a little more dry than I had hoped, even though it was mashed @ 67 -68 for body.
The Honey didn't seem to come through either.

I guess I won't know for sure until it has Carbed up in a few weeks.

My thoughts at this stage:-

Add the Honey at the end of the boil.
Use a lower attenuative yeast to let the malt & adjuncts shine through. (jury is still out on this one until I taste it for real)

Not quite a week in the bottle & already has reasonable carb!

Funny you should ask, as I'm drinking version # 2 as we speak.

The first one went down lovely,
The second one is going down even better.

As per my comments on the last, I added the honey at the end of the boil this time & from memory I upped the Crystal malt a little.
The only other difference is that I used S-04 (my fav, yeast)
