dexrose or sugar

Ok round 2 we are starting the ginger beer got the old barrel traditional ginger beer by deliverance makes 22.5 litres so sugar or dexrose or does it really matter and yes we making the alcoholic one and it says a teaspoon of castor sugar for every 750ml we doing stubbies so will do the maths again first time so any advice or comments would be great cheers wayno :)

That's a mighty long sentence, wayno!

In a GB I wouldn't think that sugar or dex makes too much of a difference. If you've got the dex use that though. You could always add raw sugar, which will contribute flavour, which dex and table sugar won't.

Re the priming amount, do the same as for beer. If you have a homebrew kit that came with a sugar measure use a full measure for 750ml an a half measure for a stubby.

Many if not most or all ginger beer kits contain artificial sweeteners, which many brewers frown upon and more still have found to be unpleasant in the finished product.

Do a search for ginger beer on this forum because you'll find a heap of tips to make the perfect ginger beer, including adding raw ginger and other spices to kits or brewing one from scratch.

ginger beer taste great but no bubble use carbon drops turned after 2 weeks 3 weeks in the fridge flat any suggetions why this may have happens :D

Hi Wayno/Mrs Wayno,

So you put them in the fridge after two weeks in the bottle? What temperature were they stored at before they went in the fridge? It sounds like secondary fermentation has not taken place in the bottles.

That or there's a leak in the bottles.

Are all the bottles the same or have you only tried one? If they're plastic bottles give them a squeeze and they should be quite firm if they're carbed up properly.

well we have drunk them taste nice just like cordial and two weeks then fridge we gave the cartons a turn a few days before fridge and yes all the bottle were the same size and before fridge there were store at about 25 degrees did the carbon drops as instructed. We did a pale ale which had plenty of bubbles we turned after a week before fridge but did realise the pale ale stubbies were only 330 mil

I keg so never have to mess around with carbonation in bottles, but I've always found that ginger beer takes longer to ferment than other brews. Might suggest that it was probably a matter of leaving them longer before fridging them to allow the secondary fermentation the time it needed.

If you do a GB again, maybe try giving them more time in the bottles.

+1 on what bullfrog said. Leave them in the bottle at least 3-4 weeks before refrigeration.

I've always found ginger beer takes longer to carb up.
