Having tried something like this ages ago I thought I'd give it a whirl. My locan HBS produces their own cider, ginger beer, lemonade kits etc marketed as Colony West.
I combined apple cider kit with ginger beer kit, used both yeast (both champagne) added 200gm LME and 2tsp minced ginger, made up to 20L. Pithced yeast at 20C with OG of 1044.
Will now wait and see what happens!

Bottled this one yesterday, took 10 days to ferment out.
Big ginger hit on tasting with lingering apple finish, well that's from sample jar.
Will give it a few weeks now to see how it goes, but looks like it could be a winner!!
