Improving Coopers Ginger Beer?

Anyone got a good version for the Cooperskit? I did it once before but didn't let it ferment under the boss's orders, but this time I will, and I'm keen to make it more dry.

Any suggestions?
Wife says all I care about is beer and footy... she's right!

If youre after a simple recipe....
I did the coopers kit plainly with:
Coopers Ginger Beer
500g Honey
1Kg Brewing Sugar
Made up to 20L

I took it out of the fermenter far too soon and it ended up overcarbonated. Aside from that, its sweet and strong, very gingery.
And its full of random chunks, which taste funny.
If i made it again, i'd use malt and better honey, make it up to 22L and be much more patient.
Got Malt?
