First mash brew

so just to clarify;

If a recipe calls for (the missus, and probably me, would love this)

2kg pale malt
2kg wheat malt
500g orange blossom honey 5 min
15g coriander 5 min
20g orange zest 5 min
30g saaz 60 min
10g saaz 5 min
wyeast 1010 American wheat yeast starter.

then i would:

- get water (enuff to cover the gain u are going to use, so in this case about 3 liters?) to 74C, pour it into an esky,
- add 2 kilos Pale Malt and 2kg Wheat malt (which i assume u buy already "cracked") and check its about 66C
- cover it and let it sit for 60 minutes, adding the hops and fruity stuff at there respective times, eg corriander, honey, zest and saaz at 5 mins in, then more saaz right at the end at 60 mins b4 u strain it.
- strain it into an empty pot, a few scoops at a time, while rinsing the mash with 70C water 300ml or so (eventually adding up to 3litres). Do you chuck out the 3 scoops of mash after u rinse it? i imagine u squish out all the juice from the mash as well?
- boil that stuff for 60 mins
- not sure what the part about "and use the now empty hot water pot to boil up the extract in your recipe with the other half of the hop bill in about 3-4 litres of water." means... is it that some recipes will call for extra hops added like a steeped tea? is that it?
- Cool everything dwn to 25C
- bung it in fermenter along water up to 23liters. no sugars right?
- Yeast on top and seal it.

Am I close? I want to do my first Mash brew soon so i gotta sort it out.

First mash brew

JetFoley,
This thread is about "partial mash" instructions. That basically means you use some grains, but also liquid or dry extract.

Your recipe seems to be for a "full mash".
Yes, you do need to make sure the grains are milled (crushed) by the HB shop or using your own mill.
The method you describe won't really work well, or at all, for a full mash.
Have a read of this first, and then ask some more questions.

http://www.howtobrew.com/section3/index.html

There are also quite a few videos on Youtube, if you search for "All Grain Brewing", which might help.

The best way to learn how to do All Grain brewing is to sit in with another brewer on a brew day, so you can see it being done first hand. It will clear up a lot of your questions. Fill in your location, and you will likely have another brewer not too far away.

Split from partial sticky "Partial Mash Instructions" to its own thread.

Best advice i can give is to find an experienced brewer in your local area and go along to see how AG is done.

Let us know where you are and i am sure someone will be available.

I'm South side of Brisbane, near Logan.

I've had a better look at the process now, youtube helped a lot. Think i know how to do it. ill post my proposed brew and method up b4 i do it next week. Now i just need to track dwn a massive pot for the boil and an esky with a tap at the bottom.

Saw a dude on you tube was using a fermenting bucket with a 2nd hole cut into the bottom and the element from a kettle put in it. great idea, think ill do the same.

I'd still like to see it in action for real tho if some1 is close by.

Logan?

LMAO

You are not far from one of, if not the biggest home-brew shop in the country!

Craftbrewer is in Underwood, just up the road.

Drop in and say hello to Ross. Am sure he will set you on the right path!

Cheers

As far as the honey wheat goes I find that its best at 20-21 litres rather than pushing it to 23L. Even stronger its still an easy drinking summer beer.
