Spirit bubbles

My gf's uncle have me some moonshine grappa that his friend had gifted him. It looked and tasted more like whiskey but was amazing. He hadn't added anything and used a potstill.
Now the uncle was telling me you can tell is good spirits from the ring of bubbles. Basically when you pour a shot, around the walls of the glass there should be like a ring of bubbles some as big a pearls.
Anyone know anything about this or what the bubbles actually mean. or how to achieve these pearls?
