Temperature variations

how much does temperature variations affect beer ?
If a lager yeast is used with a lager kit and daytime temperatures are above 20 C but nighttime goes below 20C, will it still be better than a kit ale yeast with an immersion heater set to 22 C for example ?

An ale yeast and a lager yeast will produce different results when brewed at their correct temperatures. If I was brewing without temp control I'd be going for an ale yeast at those temps. There would be no point brewing with a lager yeast at 20 degrees plus.

As a matter of fact you can impart some real off flavours into the beer with a lager brewed to high. I got one running late summer with a San Francisco Lager yeast (Steam Beer) Temps were about 5 degrees on the high side and the stuff tasted like I put the babies nappies in the wort.

My neighbour drank it OK though. Gave him the scoots for a week. Nother story that. :lol:

Thanks for the info, so far my temp has been between 11 and 18. Was 16 today. Have put a wet towel around the fermenter to keep it a bit cooler.
Luckily the weather has cooled down a bit this week
