thehipone,

after reading your instructions on yeast culturing, & a few longnecks of coopers pale ale :wink: , i thought i'd give it a go.. 2 days in & there was a slight krausen & tiny bit of airlock action (i used a longneck bottle with a rubber bung & airlock) everything looks like its working.. albeit slowly - the malts nice & cloudy etc.. but apon tasting it its still sickly sweet (after 4 days).. is this normal? should i pitch it or leave it abit longer?

My Chimay culture took about 5 days before it got to the point where I thought it was done. I too was paranoid for the first couple days. Relax, Don't worry, have a homebrew. Upon stepping it up it grew up a nice head of krauesen within a few hours. Now I have an Army of tiny Belgians ready to do my bidding!

There is likely a small number of viable yeast in the bottom of the bottle and they're pretty stressed, it takes quite some time to reproduce to the normal concentration. Make sure you aerate well to make it easy on the little guys. If there is krauesen and bubbling, they are fermenting, should be good.

How many bottles do you need? I mean I am going to try and fire mine up with a only one bottle and well travelled to I might add. Is that enough or should I be using a full flat? Just wondering, hate for it to fail just because I didn't give it a fair enough shot.

i used the yeast from 2 longnecks..

thats a tough decision you have to make dogger - if your culturing the yeast you wont be able tip it beforehand..

You should be fine with only one bottle, provided the storage conditions haven't been too extreme and the bottle isnt extremely old.
