I have a jar of both Leatherwood Honey and "Australian Rainforest Honey" in the cupboard.

.Have it in the keg at the moment, I didn't let it age V. much but that didn't matter, though I must admit it's getting better by the day. Well done Wassa on coming up with this one.

What's the best alternative to making this one up if I can't get the Cascade Mahogany Porter kit I can't seem to buy it anywhere

This was my third batch, slightly modified as finding DDME around Alice Springs is like squeezing water from a rock: LDME,100g Dark Brown Sugar, 1 tbsp molasses. I also used organic honey instead of yellowbox. I snuck a taste (OKAY! Jeez, 10 tastes!) after a month and was pretty impressed. The flavor was really good. This shall be a staple in my beer fridge. Mas thanks for this one!

You could probably try Tooheys Dark Ale or Coopers Dark Ale.

so many pages of good comments, how could i not make this porter. Only problem is i forgot to buy the S O-4 at the LHBS so I was woundering if the kit yeast is OK ( i did read earlier in the thread Boonie saying he was going to use it) has anyone else? How was it.

I've made it with SO4 and the kit yeast. They both turn out well, it's just that I prefer S04.

How is the 15g of cascade hops added? Dry hopped steeped etc. I can't find any instructions in the original posted recipe

Got the SO4, cheers Wassa. just a little confused at the timing of the hop addition, what are you putting in the boil ? Is it just the DDM & is it just a short boil.

What I usually do is bring 2 litres of water to the boil and dissolve the malt in the boiling water. I then return it aad heat to a slow boil to kill anything in the malt and to ensure all the malt is dissolved. When I turn off the flame I throw in the hops.
You can dry hop also, but I do it this way for simplicity.

400g Orange Blossum honey
15g Cascade @ 5 min

Wow, what a beer. I've tested it on workmates - many of whom are very much "commercial" beer drinkers and definitely not dark beer fans - and the praise for this brew is universal. It's an amazing recipe, cheers for sharing it with us all, Wassa.
