Drsmurto, just tried your 600ml cola trick (but i don't touch the stuff so i used a 1.5l soda water bottle instead) - the neck was a little wide so i put a couple of rubber bands around the airlock to act as a seal, and voila! perfecto

cool! was an old trick from back in my uni days when i didnt care about temp and was brewing in 25L containers instead of the 30L barrels i use now.

Coopers Classic Old Dark Ale
500gm Dextrose, 250gm Light Dry Malt Extract, 250gm Maltodextrin
500gm Leatherwood Honey
12gm Goldings Hop steeped.
Yeast as supplied.
cracked one open just a moment ago, i reckon it compares with the JS porter. not a bad drop, ready to open another.

I was just wondering if you guys have found these recipies hoppy enough. I am planing to brew this recipie next:

Cascade Choc. Maghog. Porter Can
1kg DLME
400g of Yellow Box Honey
Fuggles Hops
100g of Roasted Barley (steeped)

Now I have two 15g packs of fuggles and I was wondering if I should use all 30g (Maybe 15g at 30mins, 15g at 10mins) or would just 15g be enough. This is the first time I am using hops because I have always found my brews to be too sweet so I am trying to counter that. I was also wondering if the roasted barley is a good idea.

It's a pretty sweet recipe (I like it that way) but you could certainly go more hops, and what you suggest sounds pretty good.

this (the dark ale/leatherwood recipe) has been in the bottle almost a month now and it has developed a beautiful not-too-sweet dark burnt toast personality. i love it. we have talked about trying it with yellow box instead but in hindsight it just needs to age a little. leatherwood is strong when still green.

interested to try the above recipe too though.

Do you mean that my hop suggestions sound good? How much did everyone else use and how long did you boil/steep for?

Is the 1kg Dark Malt mentioned in this recipe a Dark Liquid Malt Extract?

And was the yeast dry pitched, or rehydrated?

This sounds like a scrummy recipe - as do they all!!!! :D

DDME. You can also do with a 1.5kg tin of DLME. I always dry pitched this one, but I tend to use the kit yeast. I think I've done it 5 times so far.

I actually normally put in 12.5g Cascade at 5-10 mins as I prefer flavour over aroma (the original recipe calls for 20g dry hopped). It turns out great, adding a bit of spice to the overall sweet taste.

My Honey Porter is just starting to drink magnificently. It is seriously a top drop.

Dragon,

It was dry malt. If you use liquid up it to 1.5kg and for something really interesting, try 1.5kg of liquid choc malt and up the honey to 1kg.....FANTASTIC brew!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
