Hi guys, am just about to put down my 8th Brew and have decided to try another stout. The last stout I made was:

1 can Brewcraft Irish Stout
1Kg Brewcraft Irish Stout No. 74 Enhancer

So, fairly simple but turned out to be a fantastic drink, certainly one of my favourite brews so far. I wanted to improve this recipe by adding a few extras. I saw on the Brewcraft website they mentioned adding extra DME with the Enhancer No. 74 and also corn syrup. I ended up getting a can of Muntons DME which is 1.8KG and a packet of Fuggles finishing hops.

New recipe looks like this:

1 can Brewcraft Irish Stout
1Kg Brewcraft Irish Stout No. 74 Enhancer
SAF-04
1.8KG Muntons Dark Malt Extract
Fuggles finishing hops

I am after a fairly big Stout, something with a kick to it but not over the top and am hoping the hops addition is also going to work having not used them before.

Is 2.8Kg of sugars going to be too much for this recipe or should it turn out ok?

It should be fine. I estimate that it will be around 7.5% depending on exactly what's in the Brewcraft mix.

It'll probably ferment like mad so don't be surprised if you get some overflow.

Thanks mate. If I do get some overflow is there anything to be careful or wary of? Or is it just a case of cleaning up?

I suppose the other thing is I could use only half the DME but it is in one large container. Anyone know how to store left over DME? Is covering the tin with glad wrap ok or is there a particular way to store?

The only other thing I could suggest (if you're wanting a big stout) is maybe dropping your water content down from the standard 23L.

Some recipes suggest dropping the volume of water to 18L as suggested in the Brewcraft Razor Back Stout recipe. Their recipe is 1.8kg Brewcraft Premium Imported Irish Stout (1.8kg), Black Rock Dark Liquid Malt (1.5kg), Light Dry Malt (500g), Dry Corn Syrup (500g), Crushed Chocolate Malted Grain (200g) and 6 Coffee Beans.

Haven't done the recipe myself but I think that would turn out to be pretty heavy duty.
