Don't use any sugar, use malt with some 'safale' yeast try to keep it fermenting @ 20C and you won't be disapointed.

I'm with ACTbrewer, I started using the glad wrap top about 20 brews ago and have never looked back since. Less sterilizing and allways a good clear view on whats goiing on inside the fermenter.

Most people who say there beer start to go "off" after a few months must have problems with sanitizing, the taste of the beer should only mellow a bit after time.

Got to say I've had great results with the K-97 for a Redback clone.
Morgans 'Golden sheaf wheat' + Morgans 'Beer enhancer' with K-97 yeast, ferment @ 18 to 20C comes out a rippa.

I've had one for about 2 years now, also bought it @ K-Mart works a treat, only thing you can't use in them is an airlock, just wont fit so just use a blow off tube instead. Never ever make more than 23L from a kit, you'll end up with a watery beer with no head. Making up less is a can do but would'nt go lower than 20L. What ever pale you buy calibrate it using a meassuring jug, fill it up to 19L mark it with texta, same with 21L & 23L then you'll know exactly how much ...

I've done a ESB lager with 500 grams of corn syrup and some Hallertau hops, leave it in the bottle for a few months. Only low carb/alcohol beer I've ever made but was suprised with the taste.

Gas it with say 100 KPA and lift the pressure relief valve for a few seconds to replace the trapped air inside with co2, then chill it in the fridge overnight, then you can carbonate it at 220 KPA for 2 to three days depending on how much gas/bubbles you want in it, after that turn it down to 100 ...

It builds up alot so the glad wrap realy bulbs up like a little dome ( it wont burst though ) but eventualy escapes past the thread/seal join.

stay away from carboy style fermenters pails are so much better.

What's the reasoning behind this?

The lid seals alot better. I think everybody has their own view regarding the all important bubbling airlock. I dont bother with a lid, I cover the fermenter with glad wrap and use the rubber seal ...

I got about the same one @ k-mart for $199.00 with a glass door, had it for about a year now and gotta say there great. I can set mine from 10 to 22C, beauty!
