Quart53,
this sounds very familiar

Glad to see someone else is also sold on the idea. Great work!!! Great for those keggers and the couple of litres left over, apart from an alternative to the scoop and bulk priming. The model I have is ...

I've miscalc'd severely on the hop level - near turned my face inside out when I tried it.
Gregb, you can relate to that one, can't you? Imperial to metric! Think I'd learn after your story!
All was not lost, tried a 50/50 with an under hopped one and was passable.

Go the Country Brewer! makes average HBrewers look like a pro. A couple of lads at work were stunned by the quality. I take some of the credit, but the Wetpacks are practically foolproof.
Seriously, no affiliation and lucky to be a turbo piss from the original Thornleigh Store. Both the boys are ...

Chris,
agree mate, grew up on a farm, prefer our beef as well, funny that. Probably explains why I'm a bit of a tight arse too! All for naturally fed and will buy if competitive, but some marketing leaves me cold.
Did find an organic rice malt in the Health Food shop near Coles in Westfield Hornsby ...

people with passion - I like it! To weigh in on the debate, I am critical of the marketing side of "Organic" to justify rediculously high prices. Organic Chicken breast recently seen for $39.95 per KG. It's a f'ken chicken for god sake and doesn't cost that much to feed and knock it's head off!!!

Cat,
if you can afford the indulgence, add some cracked grain to your recipe. Apart from correct corbonation, etc, this will improve head retention. From experience, wheat malt would be the go, complimenting the honey styles nicely.

Thirsty,
try this:
refer to the hop list in http://www.homebrewandbeer.com/ingredients.html
Get some choc or black grain and steep (150g). Coffee plunger is good for this quantity.
Boil/ liquid malt with water and 20g of hop (about the volume of the malt can) for about 30 min. At the last five or ...

Paleman has given you the good oil. Following his advice with the boil and you won't go wrong. A bit of cracked grain is good too, 150 to 200g. I pretty much always do 1kg malt additive, so the 20 g of hops if a must.
Best of luck!

I'm normally not a stout drinker, but I did this recipe and it's going down a treat. Bit of an attempt at a Monteith's Smooth black style.
Coopers Stout can
1kg dark LM
150 choc grain
150 dark grain
15 g sticklebrac + 10g steep
1/2 hr steep for grain
1/2 hr simmer with DLM and 15g hop. Final simmer ...

I relate this topic to what I have brewed at distinct stages of my brewing experience.
1st couple of goes (no internet then) - all crap (cane sugar - doh!)
Started again about 4 years ago with K&K - pretty chuffed with most brews.
Found this site and a few others - a few partials, boils and full ...

While on the Country Brewer products, give the European Pilsner Wetpak a thought. My opinion this is a step up from the 3kg Extract, but it is quite full on with flavour compared to most pilsner kits.

Used Rice malt - very good. This doesn't impart much flavour, and was perfect when using with a C.Blonde mix, 500g LDM, lager yeast and hallertau hops (30 min boil) to make a light Kirin Style lager.

Also used the Leatherwood Honey with a Classic Old Darke, which came up quite good as well.

500g LDM
250g Dex
partial mash using 1kg Vienna Grain

30 minute boil of above with 20g of hallertau. Dissolved Bav wort into boil mix and added further 10g or so of hallertau, leaving for 15 minutes. Added to fermenter and topped up to 22 ltrs.

I did the Wal's wheat, but found it boring and floury. I added 1.5kg of blueberries to 2ndary, and it turned out great.

1. most seem to prefer Dextrose (I do)
2 You need to rack into a separate pail/carboy with the priming sugar. A dash of hot water to dissolve the sugar, before racking
