Re: TL in Adelaide!
The Wheatsheaf is definitely the place to go. Their MySpace page is generally a bit more up to date than the real website.

Re: Hops and IBU
There's a way to make Beersmith work for you in this scenario... but I never figured it out.
Can you boil 7L? If you can, just put 1/3 the fermentables in the boil and the bitterness will end up the same as if you boiled the full 21L because you'll have the same boil gravity.

Re: Fridge or freezer??
Grab a fridgemate from here or your LHBS if they have them: http://craftbrewer.com.au/shop/details.asp?PID=718
I've got one running on my chest freezer at the moment. Pretty simple to wire up if you know what you're doing (or can find someone who does). I wouldn't bother with the tempmate as you ...

Re: James Squires Golden ale
You'll be wanting DrSmurto's famous Golden Ale, which can be found here among other places. I haven't brewed the AG version (although I have done the Kit version which was very nice) but from all reports while it might not be an exact clone it is a bloody good drop.

Re: Poor efficiency
However, although I feel that I getting a better feel for how my set-up works, I still seem to be down about 2-3 litres on target volumes (into the boiler). I use the 'keep cool' 36 litre round mash tun with steel braid. I've taken to upping the ratio of mash water to grist to 2.9l/kg but still ...

Re: Chest Freezer or Fridge
I have a 215L slimline chest freezer that fits 4 without a collar (pretty sure, have only got 2 at the moment). Should be able to get another one on the hump without any problems. The kegs I've got are 210mm x 635mm, but you need a bit more room at the top for the disconnects.

Re: Adelaide Brewpubs / Micro Breweries
Lobethal Bierhaus ( http://www.ahcb.com.au/ ) is definitely worth a visit if you can get up to the hills. Grumpy's ( http://www.grumpys.com.au/ ) as well, although I haven't been there in a while.

Re: to much head
With plastic bottles, just unscrew and rescrew the caps. I've done this (usually a couple of times over the course of a few days) to a couple of brews that were overcarbonated.

Re: Best way to take beer on a plane?
I brought 6 bottles back from Sweden a couple of years ago. I just put them inside a pair of socks and had them in the suitcase with everything else. No breakages.

Where did it go wrong?
I put down the following on 16/12/2007:
1.8 kg Muntons Nut Brown Ale
1.5 kg Coopers Amber Malt Extract
21 Litres
Kit yeast
OG 1043
Fermented at around 20-22C and after a few days it looked to be done. SG on 23/12/2007 was 1018 which seemed a bit high so I left it for a bit longer. On 29/12/2007 it ...

Re: Guinness
Hey Dave I'm definitely no Guinness expert but I have read in Charlie Papazian's "The Home Brewers Companion (Avon, 1994) that the secret ingredient is a soured double-strength Guinness (this is a high gravity Guinness fermented with lactobacillus and acetobacter bacterias) which is pasturised ...
Rogered
I was working my way through the beers on tap at the Wheatsheaf the other night and ended up with a pint of Little Creatures Rogers Beer which I thought was pretty good. A bit darker and a bit less bitter than the Pale Ale.
