Re: coffee in beer??

Last couple of bottling runs of seeing double we have done I have chucked whole roasted coffee beans into the last few bottles off the line and it worked very well.
The first time I did it with 5 or so bottles starting with one bean then doubling up for the next ones, I am not a coffee drinker but ...

Gee posting a thread in another forum about how you have been baned by another, seen it many times before and find it poor form.

As far as tongue in cheek goes I have not seen that, what I see is people genuinely think your a tool, no tongue in cheek about it.

Re: Un-malted Witbier advice please

You should expect pretty reasonble yield from the unmalted wheat, not that much less then you expect from pale malt.
Try it again and this time use 50% pale malt with it, also should have some coriander seeds, orange peel and such.

Re: Pubs in Canberra

You can't really complain that a breweries beer is to expensive using the argument that this other place sells craft beer for $4.50, I gather in canberra a schooner is 425ml, you say "reduce the price to $5.50 (I might be prepared to pay $6.)"
5 odd bucks will get you a South Australian schooner ...

it is kinda disturbing when the marketing department invent new beers based on their delusions of what people want, unfornuately they often get it right after all dumb people who listen to commercial radio and watch commercial telly are very easily lead like a pack of sheep.

That what you are tasting is called fresh beer, the stuff thats brewed here that is.
Pacific beverages, blue tongue, SAB miller or whatever they want to call themselves have to go to great lengths to make sure it cuts the mustard, including sending it to italy and other peroni breweries for it to ...

Re: Oxidisation - dare I ask?

as far as staling the oxygen can bind to wort compounds when hot this itself may not affect the beer if it does not last long, ie you drink it up fairly quickly however over time in the beer these compounds can breakdown making the oxygen availible once again once this happens the oxygen then reacts ...

Re: German dark lager advice please

If you were to use crystal malts in a lager though munich dunkel would be the one, there would be commercial examples that do, they can be fairly rich, but you want to get most of that from munich malt, its also one of the lagers were a little more dextrinous mouthfeel is called for.
With munich ...

This is actually how I prefer my beer and in general how all good craft beers should be, streams of bubbles rising up in beer? maybe for lemonade or cheap yellow fizzy swill but not craft beer as far as I am concerned.

Re: Going all grain but still restricted by pot size for now.

10-15% extract would be fine to stretch it out, at that amount you can put it in at any time and it will not affect the IBU calcs. I'd put it in the end though. At that amount it will not affect the flavour adversely to any real degree at all either.

Maybe worth while looking into a 40litre urn if ...

that would technically save the hot wort getting splashed about which is always not a good idea, yes that in theory would make a difference in the stablity of the final beer.
This is what is commonly called hot side airation which is irreversable but never really a major problem with freshing drunk ...

theres no need to worry about the hot break with extract brewing as that has already been done and removed at the brewery.

As far as making a good dark ale goes fuggles is the number one choice of hop.
Not just my opinion but pretty much thats the standard hop for such beers both commercially and at home.
