I asked the question following a warning against pitching onto too much yeast and running the risk of producing a characterless beer. My instinct is that an entire 1st generation yeast should be OK. But it's always nice to ask........

Perhaps my best ever brew was to take Doc's JSGA clone recipe, replace the Amarillo with Horizon for bittering and Nelson Sauvin for favouring and aroma..........and to ditch the crystal/caramunich altogether. Disappeared way too fast........

Oh, this is just torturous :cry:
How's any lover of dark beer supposed to read TL's glowing post and think they've got any chance of not yielding to squeezing in just one more brew into an already impossible schedule :cry:

Having downed a dozen different lagers, among others, over the wk end in the name of research, I can confirm that:

Ok, so now I'm happy with my AG set up - not perfect, but functional - and really pleased with my ales. That's all I've ever brewed - ales. But now, as the weather cools, the plan is to move my fermenting ales out of the garage brew fridge and into the house where the ambient temp is fine for ales ...

For anyone interested in what I got for WB-06 @ 17C fermentation temp:
Very tart indeed out of the fermenter. First taste of a carbonated beer: heaps of clove, only some bubblegum, nil banana and the tartness has subsided heaps. Very crisp, dryish and dare I say it, almost lager-ish. Not quite true ...

True, but for whatever reason, I found that 3068 tends to mutate sooner than other strains, so getting 3 batches from the smack pack, without yeast washing or plating out, is par for course...

Having been recently impressed by a few commercial hefe's I sampled, I decided to brew one of these last night. Went 50/50 Weyermann Pils and Wheat, mashed @ 67C, 90 min boil, Hallertau @ 60 and 10 to 13 IBU and WB-06.
But my big worry is fermentation temp. :? I read a few posts on AHB over ...

Noooooooooooo. Stainless steel = God's own Material.Another reason to not use stainless!

As it happens, I'm already in the G&G grain book and agree it's an extremely convenient facility. I was simply considering other options.........
