The process you are describing is basically where I'm up to with my brewing, with a few exceptions. It looks like your doing a partial mash with grains which only need to be steeped. My understanding of crystal is that it is grains which have been mashed to a degree and the sugars ...

Wheat Yeast

The 3Kg ESB Bavarian Wheat kit comes with the SAF-K97 wheat yeast. I've just bottled one and it smelt and tasted great out of the fermentor. Can't wait for it to mature a little.

I saw the Irish Stout the other day and I can confirm it was in the the Thomas Coopers Premium range. They have also released another Pilsener in the same range. I'll have to have a look next time but I suspect they will be the same as the other kits in this range and recommend the use of 1.5Kg ...

Oh dear. I think I've got some big problems. My latest batch of beer using town water has gone the same way as the others.

The brew doesn't really look that bad. It's just this God aweful stench that if you have a whiff it really hits all your senses like a punch in the face. Nasty!

I've been told that boiling up the unwanted packet yeast makes good yeast nutrient for the liquid yeast you use. Have no idea if this is true or not though.
