Pectin?

I wasn't sure what to do to make sure there was no bacteria on the fruit, but I tried not to keep it in for water for too long cause I thought it they started to cook it might not have been a good thing. Guess it's ok then?

The colour has improved now that it's settled, should have racked ...

Don't go for an actual IPA recipe because although it is called that, it doesn't resemble one at all. It's been a while since I had one (because it is the only beer I have ever had that affects my stomach badly, makes it churn because it's so nasty...) but I would probably try... a basic ale kit ...

I just bottled my experiment.

I used the black rock cider kit (which I have used many times before, it always comes out great) and I put some pears in there, to see what happens.

I looked here and googled a bit but couldn't really find out much about adding fruit.

My beers are a bit too sweet

I have only made a few beer brews so far (I'm in love with making cider) and everything I have done, be it ale or larger is a little too sweet for my liking.

I've been thinking of what to try to counter this, bittering hops? Dry enzime? More time ageing?

My friends ginger beer always tastes weak and watery at first, but after it ages in the bottles the flavour seems to improve.

I'd add the lactose to the entire thing them let it settle again before bottleing.

I have something like this, when I hold my bottles of larger up in front of a window I can see specs in it. It's my first beer brew (only made cider before that) so I have no idea what to expect.

I figured it is either:

a) Completely normal
b) Infected brew (I have no idea what an infection would ...

Newbie question about bottle fermenting

Ok, if the bottles have been sitting there for a few weeks, but they still taste sweet and are flat, I'm pretty sure that means the priming sugar is still in there and secondary fermentation hasn't happened. Probably cause my house has been too damn cold.

What I want to know is, is it too late?

I got a nice little pack called something like "Beers of Europe, & free glass!" which I couldn't resist. Had a beer from Germany, one from Holland, one from Austria, Belgium, ect.

A friend just called and told me that a cider of mine exploded on him on the tram, lol. So maybe I have enough carbonation after all.... Apparantly the bottle split it's side after he did some running with it, hehe.
