Ginger Beer

I need a good ginger beer (alcoholic) recipe for the wife.

No, the wife's not an alcoholic but I'm after an alcoholic ginger beer. I've used a Coopers before, but the artificial sweetener is a shocker.

Any ideas?

Sorry to but in here, but I'm sure the correct answer to your question is - "you don't"! A 60L brew would be bloody heavy, and I reckon you'd bottle it from where you left it.

I too suffer from the same terrible problem. The more I read this forum the more I realise that I'm doing no favours at all by drinking my HB's after 2 weeks in the bottle. Basically, the whole batch (30 bottles) is gone within 2 weeks, at which time I CAN certainly notice the improvement ...

So, if we are already adding extra malt (light or dark, dry or liquid) then why does the grain (crystal, dark, choc or roast or whatever) already have to be pre-malted? I ceratinly will. So, is it the case that the grain (say, crystal) you buy from the HBS is already malted or partly malted? I'm just trying to get my head around this partial stuff.

Oh dear Mr Chris - too late. I've already roasted the b'jeeves out of the barley (smells nice), but of course haven't yet added it to anything. I thought you couold add roasted (but not malted) barley to the mix? Mate, your instructions sound complicated - I have to bale our here!

Chris, I just came home with about 200g barley from organic shop whilst shopping with the Mrs - it was only 70c and I thought I might roast it (to pretty dark), crack it and steep it to add to the boil for my Coopers Dark Ale. Will this be okay, as at this stage I don't really want to pay $7 or $8 ...

Chris, is that the stuff that helps the yeast eat up more of the sugars thus creating a higher alcohol, less sweet beer? I don't like the sound of it either - have you used it, and why is it so bad?

I reckon the B-Neez is a superb beer and it should have at least got 3 1/2 stars. Some of you guys are just showing off, I reckon! But seriously, I'm just about to put down my third evr brew, and they are improving with experimentation (i.e. malt, dex & maltodex rather than the castor sugar I used the first time!) and some hops (tea bag from HB shop) - I can't wait to crack one ...

I'm just about to bottle my first ever brew, and boy I'm Thirsty. So, what's the go - glass or plastic? I'm thinking plastic for simplicity, and as I'm a tight arse I'm considering going to the recycling depot and getting as many 1 litre plastic soft drink bottles as I can carry.
