LCPA clone - 1st in class and Best in Show 2007 Gawler Show
1 can Grumpys 25IBU
1.7 kg Grumpys Pale Malt Extract
250g JW caramalt (50 EBC) steeped
15 g Cluster pellets @ 15 mins
15 g Chinook pellets @ 15 mins
5 g Cascade pellets @ 15 mins (why, i dont know, i just did)
US56 yeast
15g cascade dry hopped at rack
The morgans in the original recipe is 28 IBU but by swapping the chinook and cascade around i am adding another 5-6 IBUs anyway. Maybe use a coopers lager/draught (22 IBU). Use any tin of pale malt extract.
The ginger beer scored a 2nd in class - criticisms were that it lacked ginger bite and was too thin.

2kg raw sugar

I have a more recent version that uses 50% more ginger and it was old ginger (left in the fridge for > 1 month which makes it more potent) and its got the real kick that i was after so i suggest upping the ginger to 1.5kg for this recipe. My next experiment will be subbing half the raw sugar for LDME and adding 250g of light crystal malt for some added sweetness. This one is a work in progress but its on its way. The recipe above will give you an alcoholic ginger lemonade type drink thats very dry but very refreshing and not being malty you can drink it like water!
The dark ale that came 3rd in its class. It must have been very close to
winning since it scored 43.5/50 and the LCPA clone scored 45/50 and was the highest scoring beer.
I dont name my beers much anymore, but was listening to a bit of megadeth at the time so this one got named - Prince of Darkness Ale
1 tin Lager (i used a blackrock tin cos it was laying around - sub with any)
1 kg LDME
200 g choc malt
50 g black patent
250 g light crystal
250 g dark crystal
15 g POR @ 30 mins
20 g Fuggles @ 15 mins
20 g Fuggles @ flameout
Safale S-04
Lots of choc malt so plenty of coffee/choc type flavours. Using the S-04 and leaving it in secondary for 2 weeks left a brilliantly clear beer. Gotta love the way S-04 sticks to the bottom of the fermenter like shit to a blanket!
Enjoy. but like me, experiment, tweak and adjust them. Its what i do, borrow
recipes from here and then try out slight changes and see what works.
My AG equipment is ready to be picked up so am doing my 1st AG on Saturday - will be an LCPA clone again and after the success with the kit version i will be starting off with a very similar version subbing the malt extract for pale malt and bittering with NB.
