wheat recipe please

Suggest or request any recipes for a particular beer or style of beer. Post all recipes here, including kit, partial mash and all-grain.

wheat recipe please

g'day all

i've never got around to doing a wheat kit and as i'm getting fairly well stocked up with various ales i would appreciate a tried and tested wheaty recipe.

also, do any of the kits come with a gen wheat yeast and is it correct that these beers don't need as long in the bottle as other beers.

Hi Tommo,
I put one down a few weeks ago and have been very happy so far, tasted one after 2weeks in bottle and its pretty good, will get better with age and would definetly make it again. Also tasted pretty good out of fermenter.

Recipe
Morgans Wheat sheaf 1.7kgs
Morgans Liquid beer enhancer 1.0kgs
500g dextrose
Hallertau finishing hops 12g (boil in bag)

I used the yeast that came with the kit but not sure of the type.
Left for 10days in fermenter and straight into bottle. Its crystal clear and hold a good head.
I've heard that other people put honey, orange rind or lemon rind, cinnamon etc into their recipes, which could give a slight variation but I'm happy for my first wheat beer, very easy to drink.

I've used honey and coriander in a Coopers Wheat Beer with good effect. Also added 4 drops of orange essence to a few bottles and left for 4 weeks... was a ripper. Would do it again.
Wife says all I care about is beer and footy... she's right!

Get some White Labs 300 Hefe yeast or at the least some Safwheat K-97. It isnt a wheat beer if it doesnt smell and taste like cloves, bubblegum and bananas. :P

Wheat beers are indeed best when fresh. Drink em if you got em.

G'day AC,

just on your earlier post, i was in the HBS today and whilst waiting for some bugger to look at me i was forced to read the morgans recipe poster, and re-reading your post it rings true with the morgans push. ( nothing wrong with that ).

Was wondering if it was the Morgan's Recipe you went with ?

And if so, have you done any other Morgans Recipes you can recommend. ( Morgans )

Hi Tommo,
Have done the blue mountain lager, with 1kgs brew booster (dex, LME, corn syrup) and 12g hallertau hops boil in the bag, also recipe from HBS.
Was so good bought another today but got 24g hallertau hops this time.
Tastes like a real nice european style lager.

I just brewed at around 24c, last time which was real good. This time as it comes with a lager yeast have thought about putting in a saflager yeast and trying to brew colder in the 12-15c range. Definetly worth a go.

Have also tried the Saaz pilsner with their lager malt extract (1kg) and 12g saaz hops, but not so happy with this one, problem with head and not as hoppy as expected, would try again with some body booster, LME and extra hops.

Have been very happy with most of their recipes thus far.

The 3Kg ESB Bavarian Wheat kit comes with the SAF-K97 wheat yeast. I've just bottled one and it smelt and tasted great out of the fermentor. Can't wait for it to mature a little.

Beware the out of date can of liquid malt. Liquid extract can develop all sorts of off-tastes if allowed to sit around too long, notably an aroma of pen ink. And 2kg of extract plus a can plus the maltodextrin will probably give you a pretty high FG and a little too sweet beer without any hop additions.

Cooper's Wheat Beer comes with a wheat beer yeast. However, even Cooper's says that it doesn't produce extremely wheat-beer characteristics (like cloviness). So if you want something with a big wheat beer taste, then go liquid or perhaps even a Safwheat.

Can anyone advise on the "bigness" of the flavours Safwheat produces?

I was planning on buying the Coopers Wheat beer, adding the 1.5kg can of Coopers Liquid Wheat malt extract, 10g of ground coriander seed, some form of orange zest or essence and a teabag of Tettnanger finishing hops. I think that makes a decent Wit recipe. Or i could drop the coriander and orange and go for a simpler Weizen.

The yeast is something im stuck on though, I've heard that the Safwheat isnt particularly 'wheaty' in its flavours - Grumpys lists the K-97 "safwheat" as a german ale yeast - but getting a liquid yeast is a little on the costly side at $15 plus postage from ESB since my local and Grumpys dont appear to stock a Belgian Wit yeast. Any word on just how wheaty the Safwheat is would be appreciated.

Guys, especially AC, I am about to put down a wheat recipe too, and am just sorting out now the ingredients required. I have as yet not gone into hops, or anything beyond what comes in the can.

I am looking at doing:
Morgans sheaf wheat 1.7kgs
Morgans wheat Malt 1kg
500g dextrose

Pretty much following yours AC - why would you choose the beer enhancer rather than Wheat Malt by the way? And what do you do with the hops, and how does it enhance flavour - as I say I am new to this.

Anything else suggested by anyone?

I just followed the recipe in the HBS, the liquid beer enhancer is actually a blend with honey and light malt; which was supposed to be a clone for red back.
The hops are so easy to use, I just used the morgans boil in the bag type, they are just like tea bags that you allow to stand in a cup of boiling water for ten mins; then add the lot to the fermenter (at the end) just before you pitch the yeast ( to prevent you breaking open the bag whilst stirring everything up and aerating the wort).
The hops when added like this simply give an aroma and only subtle taste. If you wanted a bit more bittering you could boil them with some malt and water for 1/2 - 1 hour before adding to the wort.

Seriously a very good beer which I'm allowing to condition for a few more weeks before really getting stuck into. 1st taste was really good, and I'm going to make it again.

You stick the slice of lemon down the neck of the stubbie to counter-act this.

I've never smelled any 'cats piss' on Schofferhofer, and in my experience any beer which needs lemon added to it cant be very good at all.

I currently have the following wheat beer in the Vat at the world headquarters of Smabb Enterprises

1.7kg can Morgans golden sheaf
1kg wheat malt (Morgans)
500g LDME
Saaz 12g, 10minutes

Yeast - the one in the can.

My first attempt at my own recipe. :D

I'll keep you posted with the results.
