Brewing temperatures
So, 32oC here in Melbourne today, with more 30+ days to come.
I guess that brown ale I've got in secondary will be my last brew for a while.
Those two little words that mean so much- "temperature control". Sigh.
Will also have to get the stockpile insulated- have some heavy duty corrugated cardboard boxes that slide down over the stacks of milk crates.

Doing the same, except mine is in a crate in the garage, not the sink.
Keeping about 20 degrees
, but this was a lager yeast which I thought I'd try and get in when we had that cool snap 2 weeks back

I'm fortunate that the thermostat for my heating system is right next to the brew cupboard so I can keep a reasonably accurate eye on the temperature. Currently temperature outside is 32C, but it's 25 in the brew cupboard. If it gets much hotter though, I'm going to have to break out the ice cubes and wet towels. Or do as I do and use the brocolli boxes to make an insulated fermenting box. Throw in ice bricks twice a day and I can keep the temps down to around 11-14 degrees without much trouble at all. Here's a link to a photo of it:

our laundry is central in the house and doesn't tend to get very warm. I have my fermenter on the bench wrapped in a soaking towel with ice blocks in the lid depression and it's at 22 degrees. If it gets much warmer I may plop the lot in the sink with ice and such but I think the other family members might have something to say about that!
I've got access to a cellar at the old mans place but it's an hour away. I may put down a lager later in december or such (or maybe sooner...) to enjoy at the tail end of summer. It's a constant 11-13 degrees in there

Hey guys just a quick question that has probably been answered before, but I have a pale ale that is nearing the end of its fermentation ( gravity 1012, OG 1062) and today the brew hit 26c after spending most of its life at about 21c. I have cooled it back down to 22 in the garage fridge. I sampled it when i took its last reading and it was strongly reminiscent of pineapple juice. I used a safale US 56 yeast and wonder if i have stuffed it up with this temperature spike? Anyone done the same?
I drink to make other people interesting...
